Nepalese Chicken Thukpa (Himalayan Soup)

Today, I am sharing my first Nepali recipe with you (in fact, it’s Krishna’s recipe).

We cannot go to Nepal at the moment. So, we are bringing Nepal to us. 

Nepali food is so generous and unbelievably tasty. And I feel like we could all use a bit of comfort right now. 

Krishna and I have been eating Thukpas for years and we’ve tried it many various ways. But this recipe is certainly the best! Our version is healthy, satisfying, and tastes amazing. 

Here’s Krishna’ secret recipe (makes 6-8 plates).

INGREDIENTS

• 2 boneless, skinless chicken breasts, chopped (about 500g, 17.5oz)

• 250g (9oz) noodles (Capellini or rice noodles)

• 1 small garlic bulb, finely chopped

• Fresh ginger, chopped (about 10g, 0.35oz)

• 2 green hot chilies, chopped

• 1 big red onion, shredded

• ½ red capsicum, ½ green capsicum & ½ yellow capsicum, julienned

• 2 carrots, julienned

• 1 cup of cherry tomatoes, sliced

• ¼ of cabbage, chopped (about 200g, 7oz)

• 2 bouillon chicken cubes

• ½ cup of fresh coriander

• 2 teaspoons of Soya sauce

• ¼ teaspoon of black pepper, ground

• 2 teaspoons of Coriander ground

• 1 teaspoon of Garam Masala ground

• ½ teaspoon of Turmeric ground

• 2 teaspoons of Cumin ground

• Salt

• Lemon

• Olive oil

INSTRUCTIONS

Boil water and cook the noodles according to instructions on the package. Reserve noodles when ready. Meanwhile, cut garlic, ginger, hot chilies, onions, capsicums, carrots, cherry tomatoes and cabbage. Cut chicken breasts into small pieces. 

Heat oil in a large-size pot on medium heat. Add garlic, fry for 30sec before adding ginger. Cook ginger for 30sec. Season with turmeric.

Add chicken and stir until it’s cooked. Add onions and gently cook until caramelized. Add green chilies, garam masala and salt. 

Add tomatoes. Blend until smooth. Then, add carrots, capsicums and cabbage. Mix thoroughly. Do not over-cook. 

Cover with water and bring to the boil. Add soya sauce and bouillon chicken cubes. Lower the heat, cover with a lid and bring to a very gentle simmer. Add noodles. Mix until combined. 

Turn off the heat. Serve with fresh coriander and lemon juice.
